One thing I noticed on those latest screen shots: I haven't ever skinned the B-25 so I don't know what's possible but could the eagle's lower beak be continued on to the lower surfaces, rather than being cut off by the mapping edge as it at the moment?

Yes, it can. As Maty mentioned some of the tolerances are tight and the mapping isn't a one-for-one pixel match from side to bottom, but it can be done.
